I KNOW that you are so keen to include that "trouvaille", i.e. boutique - chic restaurant in the summary !
Did check into this and have found out that the TSUI WAH Restaurant (we visited the one on Jubilee Street) is part of the "Tsui Wah Restaurant Group", with 13 outlets...
Anyhow, there is also a Fodor Guide review, that says the following:
Looking for a hearty meal in Central doesn't mean you have to spend a fortune - especially not if you head here first. Join the locals and order milk tea, and then move on to the extensive menu, which ranges from toasted sandwiches to noodles, fried rice, and Malaysian curries. Although it's not quite what typical Hong Kongers would make at home, it's as close as you can come to Chinese comfort food.
Noodles and fried rice are some of the safest bets for timid palates. There's also a wide range of set meals with very reasonable prices

Commentary (as read in a review - but accurate in my view):
Prepare your stomach before eating here. This private kitchen provides super spicy Szechuan home-cooking served in multiple courses. Have lots of cold beer on hand to deflame. The chef comes out and sings a Chinese opera ditty post-meal.
